Here is a delicious and tangy eggplant and potato curry.

Masala Paste Ingredients:
1 large eggplant cut into bite sizes
3 medium potatoes cut and boiled
3/4 cup tomato puree
1 tsp cider vinegar or vinegar
1/2 tsp amchoor powder (mango powder)
1/2 tsp turmeric
Oil as required
1 cup water
Salt to taste
Roasted Spices Ingredients
1 Tbsp coriander, ground
1 tsp cumin, ground
1 tsp garam masala
handful of curry leaves
